Taste of France: French Silk Pie (gluten free)

✨ You know it’s a good recipe when the page is splattered with chocolate and it comes from one of those old church cookbooks—the kind without a cover, passed down through years of love and laughter in the kitchen.

This one’s from my mom’s collection, and it’s still her favorite dessert of all time. Inspired by classic French chocolate mousse, French Silk Pie is rich, velvety, and elegant enough for guests—but simple enough to whip up for a quiet evening at home.

And yes, I eat mine with an Eiffel Tower teaspoon. (Wouldn’t you?)

Gluten-Free French Silk Pie

Ingredients
  

  • 1 gluten-free pie crust pre-baked and cooled, or cookie crust
  • 1 stick salted butter softened
  • ¼ tsp salt
  • ¾ cup sugar
  • 2 oz unsweetened chocolate melted and cooled (that’s 2 squares)
  • 2 small or medium eggs room temp (If you’re using large eggs: use 1 whole egg + 1 yolk.)
  • 2 tsp vanilla extract
  • Whipped cream for topping
  • Semi-sweet chocolate for curls optional but lovely

Method
 

  1. Cream together softened butter and sugar until fluffy.
  2. Mix in the cooled melted chocolate, vanilla, and salt.
  3. Beat in one egg at a time for five full minutes each. (This is what makes it silky!)
  4. Pour into your crust and chill for several hours or overnight.

Notes

Serve with coffee, an after-dinner apéritif, or a vintage French film playing in the background. 💁‍♀️🇫🇷
